She’s all tucked in for the winter.
Tank full, tires pumped up to 3 bar, battery out.
What else do you guys do when winterizing your cars?
We don’t usually get DEEP frost here, more soggy and drizzle.

We don't winterize. We continue to drive them on non-precipitation days. Of course our Capri's are domesticated and live indoors!

I don't put mine away for the winter either.
In Colorado I can usually find a day or three here and there through the winter when I can take mine out for a drive, sometimes even top down (and bundled up with heat on full blast (which is good for the whole circulatory system anyway).
I never pull my battery for the above reason, but I do keep it hooked to a modern charger/maintainer for best health. Like you, I also keep a window down and the top up for best interior and top health.
A thought, though... Even with tire pressure up like that you might want to check it through the winter, my factory aluminum wheels don't seal as well as steel wheels usually do, and I double check valve stems for tightness. Even with a few weeks of sitting tires will develop flat-spotting that might become permanent. Perhaps consider jack stands if it's going to be off the road for two or more months?
Yours looks to be in much better shape than mine = jealous!

Back here in NC the weather doesn't get that bad for any length of time. This past weekend the temps were mid 60's and I was out for a little top down pleasure.

I spent a lot of time poking around your two lane roads years ago and really enjoyed it. It nearly led me to moving to the Asheville area when we were looking at retirement/re-careering options.

lol......The Cherokee are has the best roads, but Asheville area had the best interest otherwise.
