There was once a kit available in Japan back in the 'day (early early 90s) to stroke to 1.8L

There is a readily available 1.8L though that swaps in relatively easy, at a small fraction of the cost of a stroker kit

There is a stroker kit for the 1.8 in turn, that will bring you out to 2.0L
It's not cheap though

At this point in the game it's much easier to swap in late-model engines with more displacement/power. The Ford Zetec is a good candidate, seeing there were a few transistion years where a transmission combo with the right bolt pattern for the engine & compatible axle spline means it would 'drop in' (with custom mounts etc) without having custom axles made ($$$)
